Easy Rice & Broccoli Casserole
Quick, easy, tasty, and healthy one-dish meal!
Bake at 350° for 30 minutes, or until hot and bubbly.
- 2 cups cooked, brown rice
- 1/2 cup frozen diced onion, thawed
- 1/2 cup frozen chopped bell peppers, thawed
- 16 oz. frozen chopped broccoli, thawed
- 1 1/2 cups reduced-fat shredded cheddar cheese, divided
- 1 can cream of mushroom soup (or any other cream soup of choice)
- 1/2 cup non-fat yogurt
- 1/2 cup non-fat sour cream
- Salt & pepper to taste
- 1/4 cup whole wheat seasoned bread crumbs
