Great-Great Aunt Catherine's Pecan Balls
A very special Christmas cookie - very rich and tasty. We only make them once a year!
- 2 sticks butter
- 1/3 cup powdered sugar
- 2 tsp. vanilla
- 2 cups ground pecans
- 2 cups flour
- 2-3 tsp. water (if necessary)
- 1-2 cups powdered sugar for coating
Preheat oven to 325 degrees F. Grease cookie sheet. Beat butter in mixer until fluffy, add sugar and vanilla and mix well. Gradually mix in pecans and flour. Mix well. Dough should just barely stick together. If it doesn't, add 2-3 tsp. of water until it holds together.
Scoop out 1 tablespoon of dough and roll it into a ball. Place ball on prepared cookie sheet. Repeat until sheet is full. Bake for about 25 minutes, until cookies are light brown. Roll cookies in powdered sugar while still warm and cool on racks.
