Microwaved Corn on the Cob
I live in a house divided - I LOVE corn on the cob - my hubby doesn't really care for it, and really doesn't like the way the traditional boiling method or oven roasting the ears heats up the kitchen... and he's really not all that keen on giving it some of the limited space on the grill. I planted some in the garden this year and got a bumper crop, so I had to figure out a way to cook it! So I tried microwaving - and it works great!
- 2 ears corn, shucked and de-silked
- Butter, lime juice, salt, pepper, or whatever you like on your corn on the cob
Place shucked corn on a microwave-proof plate. Microwave on high for 6 minutes, interrupting cooking every two minutes to turn corn ears. Serve with whatever you like on top...
