Okra Casserole
- Frozen okra (12 oz Package)
- 1 can diced tomatoes (28 oz)
- 1 cup frozen, chopped onion
- 1 cup frozen, chopped bell peppers
- 1 can corn, drained (16 oz)
- Salt and pepper to taste
- 2-4 tbsp seasoned panko and/or whole wheat bread crumbs, for topping
Preheat oven to 350ºF. Grease baking dish. Mix vegetables, salt, and pepper together, and place in dish. Sprinkle with crumbs. Bake for 1 hour, until lightly browned.
