Roasted Okra
Deep fried okra is awesome, but I can't eat that kind of thing anymore. :( Roasting whole okra matches the taste, if not the crunch, of the naughty version.
- Okra (whole pods, do not cut!)
- Olive oil, enough to coat tomatoes
- Salt and pepper to taste
Preheat oven to 400 degrees F. Place whole okra in a baking dish. Coat with oil, sprinkle with salt and pepper, and stir to combine. Bake for 15-25 minutes, stirring once, until soft and slightly browned.
