Thumbprint Cookies
A favorite Christmas tin cookie in our house - I mail out two batches every year!
- 3/4 cup butter, softened
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla
- 1 teaspoon grated lemon rind
- 3 cups flour
- 1/4 teaspoon salt
- Jam and/or chocolate kisses
Cream butter with mixer. Add sugar and blend unti creamy. Beat in egg, egg yolk, vanilla, & lemon rind. Mix salt with flour and stir flour mixture into butter mixture. You may have to use your hands towards the end and knead it in. Chill dough for several hours.
Preheat oven to 400 degrees. Butter baking sheets. Break off little chunks of dough (about a tablespoon worth) and roll them into balls. Roll in sugar, put on baking sheet, and flatten slightly. Carefully press your thumb in the center of the cookie. If you like, you can put a bit of jam into the holes - if you want to make the chocolate kiss version, just leave the cookie plain for now.
Bake for 8 to 12 minutes. Put cookies on rack to cool, carefully adding a chocolate kiss to the top of each, if you'd like (be careful, the kiss gets quite soft and easy to squish!)...
