Tomatoes Provençal
An oldie but goodie, adapted from The Joy of Cooking - for a real treat, look up the original version: Mrs. Rombauer and Mrs. Becker were not afraid of butter! My version is a bit healthier, since my body doesn't appreciate butter so much any more, though I have to admit that it still tastes good!
- Olive oil
- 3-4 medium ripe tomatoes
- 1/4 cup seasoned whole wheat bread crumbs
- 1/4 cup grated parmesan/romano cheese
- 1/4 cup low fat Mozarella cheese
- 1/4 cup chopped walnuts
- Basil to taste (fresh, if you can get a hold of it)
- Black pepper to taste
