Vegetarian Tamale Pie
A tasty, healthy, quick casserole, based on recipe posted on "Delightful Repast" (http://www.delightfulrepast.com/2013/06/tamale-pie-tamales-lazy-way.html). The author, Jean, has a wonderful food blog, full of what she calls "comfort food with flair." I pretty much just "vegified" this recipe, and threw in a few more lazy cook tips (I don't think you'll find Jean using canned creamed corn in any of her recipes).
- 2 tablespoons olive oil
- 1 medium onion, finely chopped (frozen o.k.)
- 1 cup mixed bell peppers, finely chopped (frozen o.k.)
- 1 tsp diced jalepeno peppers (more or less to taste)
- 1 bag frozen fake burger (Morningstar makes a nice version)
- 1 1/2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon coarsely ground black pepper
- 1/4 teaspoon oregano
- 1 28-ounce can crushed tomatoes
- 1 15-ounce can black beans, rinsed and drained
- 1 15-oz can corn, drained
- 1/2 to 1 cup (2-4 ounces) shredded Cheddar cheese
- 2 cups corn meal (I like stone ground)
- 2 teaspoons baking powder
- 1 15-ounce can creamed corn
- 2 large eggs
- 3 tablespoons olive oil (for topping)
Heat oil and saute the onions and peppers. Add jalepeno peppers. Add the fake burger and cook until thawed and heated. Stir in the chili powder, cumin, pepper, and oregano. Cook for a minute and stir in the tomatoes. Simmer for about 10 minutes. Remove from heat and stir in beans and corn.
Preheat oven to 375 degrees F. Grease a 12 inch baking dish. Pour sauce into the dish, smooth the top, sprinkle with cheese.
In medium bowl, whisk together the corn meal and baking powder. Add the creamed corn, eggs, and oil and stir until well mixed. Spread evenly over the sauce. Bake about 40 minutes.
