Baked Okra "Fry" Bread
- ½ cup millet
- 1 ¼ cups water
- 1 bag frozen okra, thinly sliced
- 1 small onion, chopped
- 2 tsp chili powder
- 1-2 jalepeno peppers, chopped
- 1 tsp hot sauce
- Salt, to taste
- Water (to add to batter as needed)
- ½ cup whole wheat flour
- 2 eggs
- 2-3 slices whole wheat bread, made into crumbs
Pre-heat oven to
375ºF.
Cook millet in 1 ¼ cups water in covered pan, for about 20
minutes, until water absorbed. Allow to cool.
Mix all ingredients, refrigerate until firm. Form into patties, coat patties in crumbs. Place patties on greased baking sheet. Bake 30-45 minutes. Cool on rack.
