Baked Tofu
Nothing fancy - just an easy, basic way to fix tofu to add to stir fries or other dishes - no deep frying necessary! These will have a nice, chewy texture. Freezing your tofu allow it to develop a firmer consistency. When you get home from the grocery store with your tofu, toss it in the freezer. You can leave it in there for months with no problem. Just make sure you thaw it out before you use it!
- 1 package extra firm tofu (16 oz) - previously frozen
- Olive oil
Thaw out tofu - just put the package in the refrigerator and leave it there for a few hours.
Now you want to press the tofu (to remove most of the moisture). Remove it from the packaging and place in a colander (make sure you have a way of preventing tofu juice from getting all over your counter - put the colander in a bowl or in the sink). Put a plate on top of the tofu, and then place some weights on top of the plate - I use a big can of crushed tomatoes and then balance a ten-pound weight on top of that). Let the tofu squish for a 1/2 hour to an hour.
Pre-heat oven to 350 degrees F.
Cut up the tofu into cubes or strips or however you want... I tend to cut it into 1 inch cubes. Place in a bowl, add olive oil (whatever you want, I add about 2 tablespoons), and stir to coat.
Place tofu pieces on a greased cookie sheet - don't let them touch. Bake 15-20 minutes, turn. Bake another 15-20 minutes, until browned.
