Caffeinated Multi-Bean Veggie Chili
Easy to make, with a bit of a caffeine kick!
- Shredded carrots (10 oz)
- 2 cups chopped onion
- 1 cup chopped bell peppers
- 2 tsp garlic
- 1-2 tbsp olive oil
- 2 tbsp chili powder
- 1 tsp cumin
- 2 tbsp dried oregano
- 2 tbsp dried cilantro
- 1 tbsp cinnamon
- ½ tsp red pepper flakes
- Salt & pepper to taste
- 1 can crushed tomatoes (28 oz)
- 1 cup strong coffee
- 1 pound fake hamburger (Morningstar makes a nice version)
- 3 cans assorted beans (16 oz each), drained: Kidney beans, pinto beans, and black beans make a nice combination
- 1 can corn, drained (16 oz)
- 1 can hominy, drained (16 oz)
Cook vegetables in
olive oil, 5-10 minutes until soft. Add the rest of the ingredients,
and cook for 20-30 minutes. Tastes better the next day! :)
