Coconut Ice "Cream"
This recipe is a simplified version of the one found on "The Kitchn" web site - the original adds corn starch and cooks the base into a sort of pudding. I accidently discovered that it comes out just fine without the corn starch or cooking, as long as everything is super cold when you start out. The base needs to be added after the machine is fully assembled and while it is running; I once tried to add the ingredients to the bowl before inserting the mixing arm and discovered that hard lumps had (VERY quickly) frozen on to the sides of the freezer bowl, making it impossible to insert the mixing arm. I have a Cuisinart 2-quart ice cream maker (Thank you, Sally!), so I know this recipe works well in that sort of machine - if you have a different kind of machine, you may need to modify things a bit to suit it...

- 2 cans coconut milk, 13.5-ounces each (regular coconut milk works better than low-fat!)
- 1/2 cup maple syrup
- 1/4 teaspoon salt
- 1 Tbsp coconut extract (or vanilla, if you'd prefer)
Place the freezer bowl in the freezer for 24 hours; you want it to be completely frozen, without any sloshing noise if you shake it. About 2-4 hours before you plan to make ice cream, mix all of the ingredients in a bowl, cover the bowl, and place the base into the refrigerator to cool.
When you're ready, remove the freezer bowl from the freezer and assemble your ice cream maker. Turn on the machine and carefully pour the ingredients into the hole at the top. Let it whirl away for 20 minutes or so. The ice cream is ready to eat at this point. Place anything you don't plan to serve immediately into an air-tight plastic container and store it in the freezer.
