Greek Zucchini Frittata
Another great way to use up summer's zucchini bounty!
Preheat oven to 350º F.
Saute zucchini and onion in olive oil until all liquid is released and cooked off. Mix everything together in a bowl. Coat baking dish with cooking spray, pour in vegetable mixture. Bake for about 35 minutes, until eggs are firm and top is slightly browned.
Makes four servings.
- 2 pounds zucchini, shredded
- 1 medium onion, chopped
- 2/3 cup feta cheese
- 2 tbsp. dried mint
- 2 tbsp. dried parsley
- 2 tbsp. pine nuts (optional)
- 5 eggs
- black pepper
- 1-2 tbsp. olive oil
