Butternut Squash Mac & Cheese - I won’t tell you this tastes just like “real” macaroni and cheese - it’s quite tasty, though! This recipe was already very good - however, it included a few items I don’t care for (like nutmeg and salt) and left out a few things I liked (e.g., parsley and onions). Most of the other changes were made in order to simplify the recipe. The original instructions stipulated cooking the milk and squash (along with some broth) together on the stovetop until the squash was tender - me being the space cadet I am, I ended up with burnt milk all over the stovetop. So I find it easier to nuke the squash and mix it with the milk afterwards (I omitted the broth, as the different cooking method seemed to cause the dish to come out too “soupy” at the end of the cooking time). The original recipe got rave reviews on SparkPeople, however, so you may want to try their method. :)

Pastitsio (off-site) - Sort-of, kind-of a Greek version of macaroni and cheese. My father-in-law is a classics professor, and sometimes took his family to Greece while he did research. My husband has fond boyhood memories of Greek Pastisio, and is very happy when I make it for him now-a-days! The only change I make to this recipe is to sub in fake frozen burger for the real thing (Morningstar Farms makes a nice version) - Posted on Food.com. - Link Posted March 12, 2013.
Rainbow Vegetarian Pad Thai (off-site) - An excellent recipe! I added baked tofu and 1 cup of mung bean sprouts. The recipe calls for fish sauce but links to a recipe for vegan "Not Fish Sauce." - I've never tasted real fish sauce, but the Not Fish Sauce tastes pretty good. :) - Posted on "Pinch of Yum." - Link posted February 23, 2016.
Vegan Fettuccine Alfredo (off-site) - The best vegan Alfredo sauce I've ever had! I had to make it low-FODMAP, so I, used sunflower seeds instead of cashews, skipped the garlic, and used cornstarch instead of flour. I also replaced the water with unsweetened almond milk to add a bit of richness lost by skipping the cashews. VERY GOOD!! :) Posted on Lands & Flavors web site. - Link posted March 2, 2017.
