Spinach & Pepper Frittata (Variation: Cauliflower & Broccoli Frittata)
Healthy, low-calorie
breakfast, with lots of vegetables to start your day right! :)
Mix everything except cheese and cooking spray together in a bowl. Coat baking dish with cooking spray, pour in vegetable mixture. Sprinkle cheese evenly over the top.
Bake for about 35 minutes, until eggs are firm and top is slightly browned.
Makes four servings.
Variation: Omit spinach, onions, and peppers. Add ½ bag (8 oz) chopped frozen broccoli, ½ bag (8 oz.) chopped frozen cauliflower, and ½ cup chopped frozen onion.
- 10 oz. box chopped frozen spinach, thawed
- ½ cup chopped frozen onions, thawed
- ½ cup chopped frozen mixed bell peppers (red, yellow, green), thawed
- 4 oz. low-fat cheddar cheese
- 5 eggs, beaten
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp dried parsley
- Salt and pepper to taste
