Zucchini Stuffed Peppers
- 1 large zucchini, grated
- 1 small onion, grated
- 1 tbsp. olive oil
- 1/2 cooked brown rice
- 1/2 shredded cheddar cheese
- 1/4 cup chopped walnuts
- 1/2 cup fake hamburger (I like Morningstar Veggie Crumbles)
- 1/2 cup spaghetti sauce
- 2 bell peppers (choose your favorite color!)
Preheat oven to 400 degrees F. Saute onions and zucchini in olive oil until soft, about 10 minutes. Mix everything except the peppers in a bowl. Carefully cut stems off peppers, cut them in half, and clean out pulp and seeds. Fill a baking dish about halfway with water, and place peppers face-up in dish. Pack peppers wth filling. Bake 1/2 hour until browned.
