Herby Tabouli
Veggies, grains, protein in one dish, with a whole lot of herbs Easy to make and doesn't heat up your kitchen - great recipe for the summer.
Pour boiling water over bulgur wheat and cover – if using dried herbs, stir them into bulgur at this time (if using a lot of dried herbs, you may have to add a little water); cover and let the bulgur sit for ½ hour. Stir in other ingredients, chill.
- 1 cup bulgur wheat
- 1 ½ cups boiling water
- ¼ cup lemon juice
- 2 tbsps red wine vinegar
- 2 tbsps olive oil
- 1 tbsp finely chopped garlic
- 1 tomato, diced
- 3 cups assorted chopped fresh/dried herbs (e.g., parsley, cilantro, basil, marjoram, oregano, mint)
- 4 green onions or chives, chopped
- 3 tbsps sundried tomatoes in oil
- 2 tbsps capers
- ½ cup roasted red peppers, chopped
- 1 can chickpeas (16 oz), drained
