Roast Brussels Sprouts ala Mike Colameco - One summer, I decided to try growing Brussels sprouts in the garden. The nursery was having a two-for-one sale, so I jumped on it, not figuring on the fact that two dozen Brussels sprouts plants would eventually yield two to three pounds of sprouts EACH! I had a lot of Brussels sprouts to deal with that year... in desperation, I called Mike Colameco on Food Talk (on WOR radio), and he gave me the following recipe – very tasty! Ingredients vary, depending on how many sprouts you're cooking.

Provençal Carrot Salad - A useful recipe found in a newspaper several years ago for a carrot salad. The medium grating of the carrots allows them to absorb the flavors without losing crunchiness or natural carrot sweetness.

Lékué Steamed Cauliflower - As simple as it gets... plus this amazing microwave steamer prevents any odors from escaping into the kitchen! One person's "yum" can be someone else's "eww," after all. In this house, I love cauliflower, Brussels sprouts, and cabbage, but up until now haven't been able to eat them often, because my hubby can't stand the cooking smells.... my mother-in-law gave me a Lékué microwave steamer for Christmas, and now I can enjoy my "stinky" delights without upsetting my loved one (thank you, Sally!). Microwaved Corn on the Cob - I live in a house divided - I LOVE corn on the cob - my hubby doesn't really care for it, and really doesn't like the way the traditional boiling method or oven roasting the ears heats up the kitchen... and he's really not all that keen on giving it some of the limited space on the grill. I planted some in the garden this year and got a bumper crop, so I had to figure out a way to cook it! So I tried microwaving - and it works great!
Eggplant
Crispy Baked Eggplant (off-site) - Very, very yummy!! If you want a vegan version, you can substitute homemade fake eggs (1 part flaxseed meal to 2 parts water) for the eggs. The eggplant slices taste great on their own - I use them as pizza toppings, in pasta recipes, and in eggplant parmesan. Eggplant-Zucchini Parmesan - I wanted to do something special with my first eggplant of 2015, so I came up with this... the eggplant slices are baked, not breaded and fried, resulting in a lighter, but still tasty, dish. Plus it uses some of my plentiful zucchini in the Zucchini Marinara sauce.

Scalloped Potatoes - Based on the version from The Joy of Cooking... the original recipe calls for parboiling the potatoes and baking the assembled dish for 35 minutes. I've learned that assembling the dish with uncooked potatoes and covering them with foil during the first part of the baking process results in a smoother texture - I finish them up uncovered to get the top nice and browned. - Posted November 25, 2015.

Tomatoes
Slow Roasted Cherry Tomatoes - At any time of the year other than late summer or early fall, when I have cherry tomatoes coming out of my ears, I would consider this dish to be a luxury! It is very tasty and useful. It can be mixed with a bit of cheese and nuts to make a pasta sauce, spread onto a pizza with other toppings, combined with onions and herbs and placed on toasted bread to make bruschetta, or just eaten by itself as a side dish. The recipe is quite simple, and I don't specify any amounts... just use your own judgment and taste. This freezes very well, so it's a good way to use up any surplus tomatoes your plants give you, to add a bit of summer cheer to the future cold winter days!
Tomatoes Provençal - An oldie but goodie, adapted from The Joy of Cooking - for a real treat, look up the original version: Mrs. Rombauer and Mrs. Becker were not afraid of butter! My version is a bit healthier, since my body doesn't appreciate butter so much any more, though I have to admit that it still tastes good!!

Zucchini
Baked Zucchini Fritters - It's that time of year again - zucchini overload! :) This recipe is loosely based on a recipe from the Wishful Chef web site (http://wishfulchef.com/baked-zucchini-fritters/). The original recipe calls for grating the zucchini and onion and squeezing out the liquid - I always think I'm squeezing out a bunch of nutrients when I do that, so I don't... I cut out the milk instead. I also cut the salt and added Mrs. Dash and a bit of Parmesan cheese instead. Very light and yummy, I'll be making a lot of these during the next couple of months!
Tousled Zucchini - A recipe from one of Bert Greene's cookbooks, Bert Greene's Kitchen: A Book of Memories and Recipes. Like all his cookbooks, this book is a lot of fun, full of stories about his life and family. He describes this recipe as "a luscious herbal baked omelet."
Zucchini Bingo (off-site) - A recipe "game" from The Classic Zucchini Cookbook: 225 Recipes for All Kinds of Squash. Each letter of the word "BINGO" represents an ingredient: Vegetables are under "B," meat under "I," sauce under "N," casserole bottoms under "G," and toppings under "O." Mixed Vegetables
Carrot-Mushroom Loaf ("Diet Version") I love Mollie Katzen's cookbooks from the 1970's and 1980's. Unfortunately, the current condition of my body (i.e., I'm getting older!) forces me to be more careful about what I eat, if I expect to be healthy during the next few decades... Ms. Katzen tended to be kind of heavy handed with the dairy products and eggs in the old days. This is a modified version of Ms. Katzen's recipe for Carrot-Mushroom Loaf from the original version of The Moosewood Cookbook (1977 from Ten Speed Press). It's actually more of a casserole than a loaf. You can find the original version of this recipe in the March 2013 edition of "Mycena News" newsletter for the Mycological Society of San Francisco (http://www.mssf.org/mycena-news/pdf/1303mn.pdf). I cut the 1/4 cup of butter in the original, replacing it with 1-2 tablespoons of olive oil, scrapped 1/2 of the cheese and 1/2 of the bread crumbs, cut out three of the five eggs originally listed, and added a can of black beans. The result is very good, reminiscent of Thanksgiving Day stuffing. :) - Posted January 17, 2016.
Dusty Okra & Corn - Based on the Dusty Cauliflower recipe from Oat Cuisine, by Bobbie Hinman. It doesn't ever get crisp, like the cauliflower, but it makes a tasty accompaniment for Tex-Mex food, like burritos or chili.
Italian Vegetable Bake - Modified from a Sparkpeople recipe (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=7); the original version is an excellent, low calorie vegetable side-dish. The addition of chickpeas and a moderate quantity of walnuts and cheese make this a main dish meal.
Parmesan Scalloped Potatoes with Spinach (off-site) - An excellent vegetable dish from Eating Well magazine.. I cut the amount of parmesan cheese from one cup to a quarter of a cup, mixing it into the sauce, and topped the casserole with a quarter cup of fat-free cheddar cheese. I also swapped out the two and a half cups of milk for two cups of almond milk plus half a cup of non-fat Greek yogurt. Even with the fat-saving modifications, this recipe makes a delicious, rich-tasting side dish or entrée (depending on portion size). - Posted March 7, 2018.
