Cashew-Almond Loaf
An excellent recipe from the 1960's - This nut loaf is from The Natural Foods Cookbook by Beatrice Trum Hunter (page 148). An oldie, but most definitely a goodie! :)
- 1 cup cashews, ground
- 1 cup almonds, blanched and ground
- 1 cup brown rice, cooked
- 1/4 cup soy grits, soaked in 1/2 cup stock
- 1 egg, beaten
- 2 onions, grated (or 1 cup grated onions and 1 cup cooked carrots)
- 1/4 cup parsley, minced
- 1/4 cup wheat germ
- 1/2 teaspoon salt
- 3 tablespoons nutritional yeast (optional)
- 1/2 teaspoon thyme (optional)
- 1/2 to 1 cup grated cheddar cheese (optional)
