Dusty Okra & Corn

on the Dusty Cauliflower recipe from Oat

Hinman. It doesn't ever get crisp, like the cauliflower, but it makes
a tasty accompaniment for Tex-Mex food, like burritos or chili.
- 2 cups frozen okra
- 1 16 oz can corn
- 1 cup chopped onions
- 2 tbsp olive oil
- 1 ½ tbsp oat bran
- 1 ½ tbsp wheat bran
- 3 tbsp seasoned dry bread crumbs (I use whole wheat)
- 1-2 tbsp chili powder
- Salt to taste
Pre-heat
oven to 400º F. Coat 10x15 inch cooking pan with spray olive oil.
Mix vegetables together in bowel; add 2 tbsp olive oil and mix well.
Add bran, bread crumbs, chili powder, and salt and mix again. Pour
mixture into cooking pan. Bake 20 to 30 minutes, until lightly
browned, stirring once or twice during baking process.
