Megaloaf (Vegetarian "Meatloaf")
Definitely too many calories for everyday fare, but a good vegetarian alternative to meat dishes on holidays - my mother-in-law has made this for me every Thanksgiving since I married into the family over 33 years ago. The omnivores in my family like it so much that they have it as a side dish - you'll definitely want to make enough for everyone - I'm the only vegetarian in the family, but this recipe always somehow disappears!
Mushroom Sauce for loaf:
- 2 cups brown rice, cooked (make sure it doesn't get soggy)
- 1/2 cup quick-cooking rolled oats
- 1 or more cups finely chopped walnuts
- 2 or more medium onions, minced
- 2 cloves garlic, minced
- 3/4 lb. cheddar cheese, grated
- 3-4 eggs, beaten
- 2-3 peppercorns, crushed
Mushroom Sauce for loaf:
- 1/3 cup butter
- or more pounds sliced mushrooms
- 2-3 tbsp. flour
- tsp. salt
- dash cayenne
- 2 cups milk
