Oatmeal Irish Soda Bread

from Food Network

Grind up the 2 ½ cups oatmeal until it resembles a fine flour. Place it in a mixing bowl. Stir the buttermilk into the oat flour and cover with plastic. Soak the oatmeal in the buttermilk for 12-24 hours.
In another bowl, sift the other ingredients together. Stir in the soaked oatmeal and mix well. If the mixture is too wet add a little more flour.
Preheat the oven to 350º F. Grease a baking sheet with the oil.
Lightly dust the work surface with flour. Turn the dough out onto the surface and knead the doughuntil if forms a soft ball. Press the dough into a round about 2 inches thick (alternately, divide it into 6-8 pieces to create small, individual loaves. Using a sharp knife, make a criss-cross cut into the top of the loaf or loaves. Place the bread in the prepared pan. Bake until golden brown, about 25 to 30 minutes. Remove from the oven and cool on a wire rack. Serve the bread warm with butter.
- 2 ½ cups oatmeal

- 1 1/2 cups whole wheat flour
- ½ cup mixed oat and wheat bran
- ½ oatmeal (NOT ground up)
- 1 teaspoon salt
- 1 teaspoon baking soda
- Flour for dusting
